We created the Byron Tallow Co. to meet the growing market need for premium, biocompatible fats and oils.
Tallow is a nutrient-dense saturated fat that is highly sought after by people on whole foods, low carb, ketogenic, and paleo diets. These diets are growing in popularity due to increasing scientific evidence that supports the use of healthy saturated fats in disease prevention and weight loss.
The Keto diet was the no. 1 searched diet on Google in 2020 and the market for Keto foods is expected to grow to $15.64 billion globally, with a 5.5% expected annual growth.*
The Nutritional Business Journal reported that sales of natural, organic and functional foods would grow to $300 Billion annually in the US alone, with 8% expected year on year growth.
While tallow used to be commonly used in home kitchens up till the 60s and restaurant chains such as KFC and McDonalds till the 1980s, the cooking oil fell out of favour during the low-fat movement years. Highly-processed seed oils took over the market because they were cheaper and portrayed as low fat. However, today’s scientific research** shows that eating saturated animal fats and vegetable oils such as olive oil and coconut oil is actually good for heart health, insulin sensitivity and weight loss alongside a ketogenic or low carbohydrate diet. Other research shows that highly-processed seed oils lead to poor gut health and a variety of other health problems.***
About the Founders
Nathan Aherne is an accomplished business founder and manager, having built more than twenty businesses (he started very young) and having worked at Executive Level of several public and private companies.
In 2005, he Co-Founded Reddog Technology with long time friend, Jason Rudolph. In 2009 he was featured in Smart Company’s Hot 30 under 30.
Nathan’s professional experience has given him exposure to many facets of business, from scaling businesses to multiple countries to complex international law, finance, human resources and product development.
He has broad international business networks and has advised many successful private businesses, business people and publicly listed companies on tech, business strategy and people.
He has extensive technology experience in over 20 industries with real-world experience in software (desktop and SaaS), hardware, UX, UI, change management, global-scale infrastructure, networking, virtualisation, App development, Artificial Intelligence, embedded and everything in between.

Caroline Szellemes (nee McCullough)
In 2018, Caroline (Cara) Szellemes was struggling with her weight, high blood pressure and she was a borderline diabetic. When her sister passed away of Pancreatic Cancer late that year, it was a wake-up call.
So, on the advice of her GP, Cara started following a low carb diet combined with intermittent fasting.
She then took on a disciplined Keto diet in 2020 and overall, has lost 28 kg, no longer has to take blood pressure medication and is no longer a borderline type 2 diabetic.
It was through her keto journey that Cara discovered tallow. She started making tallow skincare products and selling them on Etsy and locally in 2020. Noticing an uptick in demand for tallow globally due to its popularity in the keto/carnivore world, she saw an opportunity to provide artisanal Australian grass-fed tallow for the Australian market.
Added to this, Cara has approx. 30 years of experience in marketing communications and running a small business. She’s an international award-winning content strategist and copywriter, an Amazon no. 1 bestselling author and a podcaster. Cara also founded a tech startup through the Bluechilli accelerator program in 2016, but closed the company, Writally, in 2020.
She currently works in an innovation role at a large professional services company while developing Byron Tallow.
